Instructions
Dice the onions, carrots, and celery.
In a large skillet, add oil and sauté vegetables, garlic, and cumin about 5 minutes.
Add the lentils, stock, saffron, seasonings, and rice. Bring to the simmer, cover, and cook for 15 minutes.
Remove from heat and add lemon juice to taste.
