1lbboneless veal leg top round steakcut 1/4 inch thick
1/2cupshredded Swiss cheese
1/3cupfine dry bread crumbs
1tbspsnipped parsley
1/4cupall-purpose flour
1beaten egg
3tbspmargarine or butter
Instructions
Cut ham into strips. Cut veal into 4 pieces. With a meat mallet, lb each veal piece to 1/8-inch thickness. Place some ham and cheese in center of each veal piece. Fold in sides, then overlap ends, forming bundles. Secure with wooden picks. Combine bread crumbs, parsley, and 1/8 teaspoon pepper. Roll meat bundles in flour, egg, then crumb mixture. In a large skillet melt margarine. Cook meat bundles over medium heat for 14 to 17 minutes or till golden brown, turning occasionally. (Reduce heat to medium-low if browning too quickly.)
Oven directions:
Prepare meat bundles as above. In a large skillet brown meat bundles in melted margarine for 5 minutes. Transfer to a 12 x 7-1/2 x 2-inch baking dish. Bake in a 400° oven for 18 to 20 minutes or till done.
