Crabmeat
picked over well to remove any bits of shell or cartilage

fresh bread crumbs

chopped chives or scallions

olive oil or vegetable oil
Instructions
Preheat the oven to 400°F.
Sprinkle the fish inside and out with salt.
Combine the remaining ingredients, except the oil and sauce.
Stuff the fish with the mixture and close with skewers and string. Sprinkle the fish with oil and place in a foil-lined baking pan .
Bake, uncovered, until the fish flakes easily when tested with a fork, 30 to 40 minutes.
Serve with prepared Rémoulade Sauce 1 to which has been added 1/2 cup Crabmeat.
