diced cold tongue or veal

crisp apple
unpeeled and diced

diced cooked potatoes

diced or julienne cooked beets
Mayonnaise
Sour cream
optional
Greens
Chopped fresh dill or parsley
Tiny whole cooked beets
Instructions
Cut the herring in thin pieces and combine with the meat, apples, and vegetables.
Toss well with enough mayonnaise to bind or a combination of mayonnaise and sour cream.
Pack into a mold. Chill.
When ready to serve, unmold on a bed of greens, sprinkle with dill or parsley, and garnish with the tiny beets.
