132 oz. pkg ready–to–heat mashed sweet potatoes (from our deli)
112 oz. pkg steam-in–the–bag green beans
Instructions
1. Preheat oven to 400 degrees. Grease a baking sheet with cooking spray. Set aside.
2. Add egg to a shallow plate. Mix bread crumbs and pecans together and transfer to a shallow bowl. Dip tilapia fillet into egg and then press one side into bread crumb/pecan mixture. Set each fillet onto baking sheet, breaded side up. Repeat with remaining fillets. Bake 8 to 10 minutes, until cooked through.
3. While fish cooks, microwave sweet potatoes according to package. Prepare green beans according to package
4. To serve, arrange sweet potatoes, green beans and tilapia on 4 plates
