Instructions
In a large bowl, combine the coconut milk, tomato paste, red wine vinegar, fish sauce, and the sweetener as a marinade. Add the chicken. Marinate for 2 to 3 hours.
Place marinated chicken pieces on skewers and grill or broil for a few minutes on each side.
Serve chicken skewers garnished with scallions and peanuts.
