Ingredients
  

  • 3 tbsp coconut milk
  • 1 tbsp tomato paste
  • 1 tbsp red wine vinegar
  • 1 tbsp fish sauce
  • 1 tbsp sweetener
  • 1 lb boneless chicken cut into bite-sized chunks or strips
  • 3 scallions chopped
  • 2 tbsp finely chopped roasted peanuts

Instructions 

  • In a large bowl, combine the coconut milk, tomato paste, red wine vinegar, fish sauce, and the sweetener as a marinade. Add the chicken. Marinate for 2 to 3 hours.
  • Place marinated chicken pieces on skewers and grill or broil for a few minutes on each side.
  • Serve chicken skewers garnished with scallions and peanuts.
