1 ½cupscracker meal or fine bread crumbs as needed
1/4cuppeanut or vegetable oil
1/2cupbutter4 oz.
1dash saltto taste
1dash pepperto taste
Instructions
Dip the oysters in the egg, then roll in the meal or crumbs. Heat the oil and one half of the butter cube in a frying pan. Fry the oysters until golden brown on each side, seasoning with salt and pepper.
Cut the loaf of bread lengthwise, making the bottom half larger than the top. The idea is to make a sort of bread "basket." The top is the lid. Remove some of the bread from the inside of the bottom half. This is where the oysters will be placed. Spread remaining butter over the inside top and bottom of the bread. Additional butter may be used if desired.
Place the bread in a 300° oven for 5 - 8 minutes. It should be crusty and slightly warm. Fill the bottom half with the fried oysters. Put the lid on, and press together gently. If you are planning to use this for a picnic, wrap in a clean dish towel for transporting to the site. Oyster loaf can also be made using individual French rolls. How many this will serve depends on oyster loaf appetites. There are some who can easily devour the entire loaf.
