Instructions
Prepare a charcoal grill and place a rack 4 inches above the coals.
Meanwhile, rinse the salmon and pat dry. Rub with garlic on all sides. Place in a glass dish
Whisk the honey, soy sauce, and pepper flakes. Pour over the fish and turn to coat evenly on both sides. Let marinate for 15 minutes at room temperature; most of the marinate should be absorbed by the fish.
Remove the fish from the marinade, and place in a fish basket. Grill for 4 to 5 minutes per side, according to its thickness; do not overcook. (It should flake when pierced with a fork.) Serve immediately, garnished with lemon wedges.
NOTE: The salmon can also be grilled under the broiler, about 3 to 4 inches from the heat, on a sheet of foil. When it's time to flip the fish, place another sheet of foil over it and turn it over.
