1. Preheat oven to 375°. Grease a cookie sheet then set aside. In a large mixing bowl beat shortening and butter for 30 seconds. Add brown sugar, granulated sugar, pie spice, baking powder, baking soda, and salt. Beat until fluffy. Add eggs and vanilla; beat thoroughly. Beat in flour. Using a wooden spoon, stir in oats, dried cherries, and orange peel.
2. Generously fill a 1/3 measuring cup with dough and drop onto a greased cookie sheet. Press into a 4-inch circle. Repeat with the remaining dough, placing cookies 3 inches apart.
3. Bake in oven for 8 to 10 minutes or until edges are golden. Let stand 1 minute. Transfer cookies to a wire rack and let cool.
