Ingredients

cleaned and with the outer leaves removed

extra-virgin olive oil

small onions
sliced thinly

lean beef
diced

slab of pancetta
cured bacon, cut into small cubes

fresh peas
or frozen

asparagus tips

fresh shell beans

beef broth

thick crusty bread
Instructions
Slice the artichokes into sixths; remove and discard the core.
Heat the oil in a skillet over medium heat; sauté the onions until lightly browned.
Add the beef and the pancetta and cook for 10 minutes longer.
Add the remaining ingredients and cook for 45 minutes.
Toast the bread on both sides and place one slice in each of four soup plates.
Pour the soup over the bread, let sit for a few minutes, and serve.
