Ingredients
  

  • 1-1/2 lb Pork
  • 1-1/2 lb pork fat
  • 1/2 lb Pork rind
  • 1 tbsp Salt
  • 3/4 tsp Black pepper
  • 1 tsp Garlic crushed
  • 1/4 tsp Sage ground
  • 1/4 tsp Marjoram
  • 1/4 tsp Thyme
  • 2 oz Dry white wine

Instructions 

  • Procedure:
  • Cut the meat into cubes small enough to fit into the grinder. Chill the meat thoroughly.
  • Simmer the pork rind at least 2 hours in salted water, until very tender. Drain and chill.
  • Grind the meat once with the 1/4-inch or 3/8-inch plate and then once with the 1/8-inch plate.
  • Repeat this grinding procedure with the pork rind. Mix the ground pork rind with the ground meat.
  • Mix the salt and spices with the wine. Add to the ground meat and mix thoroughly by hand.
  • Stuff into hog casings.
