If you are to serve this dish with Scaloppine Of Veal With Herbs (see recipe), you will not have to use additional butter. Use the same skillet with drippings. Otherwise, add the butter to a skillet.
Add the onion and garlic and cook briefly. Add the wine and cook to reduce about half. Add the tomatoes, basil, salt and pepper to taste. Cook about 5 minutes.
Pour the mixture into the container of a food processor and blend to a purée. Reheat and serve.
