Season the flour with salt and pepper and dredge the liver in the flour, shaking off any excess.
Heat the oil or drippings in a sauté pan and add the liver. Sauté the liver over medium high heat for 5 minutes, then turn and sauté for 4 minutes on the other side. Transfer the liver to a heated platter and keep warm. 3 Reduce the heat to medium and add the onions to the pan; season with salt and pepper and cook until tender, about 5 minutes. Arrange the onions over the liver, top with the bacon strips, and serve.
