4 4-ouncehaddock fish fillets
1tspground coriander
2tbspdrained capers for garnishoptional
Chopped cilantro for garnishoptional
Instructions
Heat oven to 450°F. Combine tomatoes, olives, salsa, and, if desired, salt and pepper.
Spread half of tomato mixture in a shallow baking dish that is large enough to hold fish in one layer. Put fish in dish and sprinkle with coriander. Spoon remaining tomato mixture over fish.
Bake for 12 to 15 minutes or until fish is opaque.
Transfer fish and sauce to a serving platter and, if desired, sprinkle with capers and cilantro.
