Ingredients
  

  • 1 onion
  • 2 carrots
  • 2 stalks celery
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • 1/4 tsp ground cumin
  • 1 cup yellow lentils
  • 3 cups chicken stock
  • Large pinch of saffron
  • Salt
  • Black pepper
  • 2 tbsp rice
  • 1 tbsp fresh lemon juice or to taste

Instructions 

  • Dice the onions, carrots, and celery.
  • In a large skillet, add oil and sauté vegetables, garlic, and cumin about 5 minutes.
  • Add the lentils, stock, saffron, seasonings, and rice. Bring to the simmer, cover, and cook for 15 minutes.
  • Remove from heat and add lemon juice to taste.
