Yellow Lentil Soup/Stew

Ingredients
- 1 onion
- 2 carrots
- 2 stalks celery
- 2 tbsp olive oil
- 1 clove garlic minced
- 1/4 tsp ground cumin
- 1 cup yellow lentils
- 3 cups chicken stock
- Large pinch of saffron
- Salt
- Black pepper
- 2 tbsp rice
- 1 tbsp fresh lemon juice or to taste
Instructions
- Dice the onions, carrots, and celery.
- In a large skillet, add oil and sauté vegetables, garlic, and cumin about 5 minutes.
- Add the lentils, stock, saffron, seasonings, and rice. Bring to the simmer, cover, and cook for 15 minutes.
- Remove from heat and add lemon juice to taste.
