Ingredients
  

  • 2 tbsp vegetable oil
  • 1 tsp minced garlic
  • 1/2 cup rice preferably jasmine
  • 6 cups low-sodium chicken stock
  • 1/3 lb boneless skinless chicken breast cubed
  • 1/2 tsp salt
  • 1 tablespoon fresh fresh gingerroot thinly sliced
  • 2 whole Scallions thinly sliced on the diagonal for garnish
  • 10 sprigs cilantro chopped for garnish
  • 1 dash ground white pepper

Instructions 

  • Heat the oil and garlic in a small soup pot over moderate heat. Add the rice and toss around in the pot until rice turns white and opaque, about 3 minutes.
  • Add the chicken stock and bring to gentle boil. Reduce heat and simmer until rice has expanded and soup is velvety, about 20 minutes. Add the chicken, salt, and ginger and simmer for another 8 to 10 minutes.
  • Remove from heat. Transfer to individual serving bowls and garnish with scallions, cilantro, and white pepper.
