Ingredients
- 12 cups fresh bread crumbs
- 1 cup chopped parsley
- 1-1/2 cups finely sliced scallions or shallots
- 1 tbsp salt
- 1-1/2 tsp freshly ground black pepper
- 1/2 to 3/4 lb unsalted butter
- 1/2 cup pine nuts
- 2 tbsp fresh or 1 tbsp dried tarragon
Instructions
- Use French or Italian bread, crusts trimmed, for the bread crumbs.
- Melt the butter in a skillet, add the scallions or shallots, and toss to coat well. Mix with the rest of the ingredients. Taste for salt.
- Use to stuff the breast cavity. This amount should be more than ample for a 20-pound bird.
