Ingredients
- 4 slices stale bread cut in large chunks
- 1/4 cup milk plus 1 tbsp milk
- 1 buffalo mozzarella approximately 1 pound, cut in thick chunks
- 6 tbsp unsalted butter
- 4 anchovy fillets canned in oil, rinsed to remove the salt and mashed with a fork
Instructions
- Baste the bread with the 1/4 cup milk.
- Thread the skewers, alternating mozzarella with bread.
- Melt the butter in a small skillet; brush the mozzarella and bread with half the butter.
- Place in a baking pan so that both ends of the skewers rest on the sides of the pan and the mozzarella and bread do not touch the pan. Grill in a 500 degree oven until the bread is toasted and the mozzarella soft; turn once or twice so that all sides are cooked.
- Meanwhile, sauté the anchovies in the remaining butter; add 1 tbsp of milk and cook for 2 to 3 minutes or until the sauce is well blended.
- Place the skewers on a serving platter; pour the sauce over them evenly. Serve hot.
