Ingredients
  

  • 2 lbs smoked fish fillets
  • Milk
  • 4 tbsp butter
  • Chopped parsley
  • 1/2 tsp freshly ground pepper

Instructions 

  • Place the fillets in a heavy Skillet and add milk to barely cover. Put a lid on the skillet, and poach the fish until it is just cooked through, allowing about 10 minutes per inch of maximum thickness.
  • Remove to a hot platter, dot with butter, and sprinkle with chopped parsley and pepper.
  • Serve with tiny boiled potatoes and scrambled eggs.
