Smoked Fish Fillets Poached in Milk

Ingredients
- 2 lbs smoked fish fillets
- Milk
- 4 tbsp butter
- Chopped parsley
- 1/2 tsp freshly ground pepper
Instructions
- Place the fillets in a heavy Skillet and add milk to barely cover. Put a lid on the skillet, and poach the fish until it is just cooked through, allowing about 10 minutes per inch of maximum thickness.
- Remove to a hot platter, dot with butter, and sprinkle with chopped parsley and pepper.
- Serve with tiny boiled potatoes and scrambled eggs.
