Shrimp Salad Sandwich

Ingredients
- 2 cups shelled cooked shrimp
- 1/4 cup chopped chives
- 5 tablespoon dijon mustard
- 2 tbsp chopped capers
- 3 tbsp mayonnaise
- 10 oz water chestnuts drained and chopped
- 1 dash salt to taste
- 1 dash Black pepper freshly ground, to taste
- 1 teaspoon lemon juice
- 1 dash Tabasco pepper sauce to taste
- 4 each pita bread white or whole wheat
- 1 whole hardcooked egg sliced, watercress and olives for garnish
Instructions
- Chop the shrimp coarsely and combine with the chives, mustard, capers, mayonnaise, water chestnuts, salt, pepper and lemon juice. Add more mayonnaise if necessary to make a spreadable mixture. Add Tabasco and blend well.
- Spread the filling over the insides of the pitas. Garnish the sandwiches with egg slices, watercress sprigs and olives.
