Ingredients
  

  • 3 to 4 lb sea bass
  • 1 dash salt
  • 1 lb Crabmeat picked over well to remove any bits of shell or cartilage
  • 1/2 Cup fresh bread crumbs
  • 1/4 Cup cream
  • 1/4 Cup chopped chives or scallions
  • 1/4 Cup chopped parsley
  • 4 tbsp butter melted
  • 3 tbsp chopped celery
  • 1 dash Black pepper freshly ground
  • 1 teaspoon olive oil or vegetable oil

Instructions 

  • Preheat the oven to 400°F.
  • Sprinkle the fish inside and out with salt.
  • Combine the remaining ingredients, except the oil and sauce.
  • Stuff the fish with the mixture and close with skewers and string. Sprinkle the fish with oil and place in a foil-lined baking pan .
  • Bake, uncovered, until the fish flakes easily when tested with a fork, 30 to 40 minutes.
  • Serve with prepared Rémoulade Sauce 1 to which has been added 1/2 cup Crabmeat.
