Sea Bass Stuffed With Crabmeat

Ingredients
- 3 to 4 lb sea bass
- 1 dash salt
- 1 lb Crabmeat picked over well to remove any bits of shell or cartilage
- 1/2 Cup fresh bread crumbs
- 1/4 Cup cream
- 1/4 Cup chopped chives or scallions
- 1/4 Cup chopped parsley
- 4 tbsp butter melted
- 3 tbsp chopped celery
- 1 dash Black pepper freshly ground
- 1 teaspoon olive oil or vegetable oil
Instructions
- Preheat the oven to 400°F.
- Sprinkle the fish inside and out with salt.
- Combine the remaining ingredients, except the oil and sauce.
- Stuff the fish with the mixture and close with skewers and string. Sprinkle the fish with oil and place in a foil-lined baking pan .
- Bake, uncovered, until the fish flakes easily when tested with a fork, 30 to 40 minutes.
- Serve with prepared Rémoulade Sauce 1 to which has been added 1/2 cup Crabmeat.
