Ingredients
  

  • 12- ounce jar herring tidbits
  • 1 to 1-1/2 cups diced cold tongue or veal
  • 1 crisp apple unpeeled and diced
  • 1 cup diced cooked potatoes
  • 1 cup diced or julienne cooked beets
  • Mayonnaise
  • Sour cream optional
  • Greens
  • Chopped fresh dill or parsley
  • Tiny whole cooked beets

Instructions 

  • Cut the herring in thin pieces and combine with the meat, apples, and vegetables.
  • Toss well with enough mayonnaise to bind or a combination of mayonnaise and sour cream.
  • Pack into a mold. Chill.
  • When ready to serve, unmold on a bed of greens, sprinkle with dill or parsley, and garnish with the tiny beets.
