Ingredients
  

  • 2 cups barley flakes
  • Salt and freshly milled pepper
  • Butter or roasted nut oils

Instructions 

  • Toast the flakes in a dry skillet over medium heat, stirring frequently, until they smell good.
  • Bring 2 cups water to a boil in a saucepan. Add 1/2 teaspoon salt, then the flakes. Cover the pot, lower the heat, and cook for 5 minutes.
  • Turn off the heat and let stand for 5 minutes more.
  • Fluff with a fork, add butter to taste, and season with pepper.
