Ingredients
  

  • 3/4 lb pasta
  • 6 tbsp extra-virgin olive oil
  • 1 small onion chopped fine
  • 1 clove garlic chopped fine
  • 2 Roma tomatoes cored and chopped coarse
  • 1 tbsp double-concentrate tomato paste
  • 1 3-3/4- ounce can oil-packed sardines drained
  • 2 tbsp finely chopped fresh dill
  • 2 tbsp finely chopped fresh Italian parsley
  • Salt
  • Black pepper
  • 1/4 cup pine nuts toasted

Instructions 

  • Bring a large pot of water to a boil. Add the pasta and cook until al dente, following the manufacturer's suggested cooking time.
  • While the pasta cooks, prepare the sauce. In a large skillet, heat the olive oil with the onion and garlic over medium-low heat. As soon as the onion begins to turn golden, 3 to 4 minutes, stir in the tomatoes and tomato paste. Sauté about 1 minute more.
  • Add the sardines, breaking them up with your fingers into coarse pieces, and sauté until heated through, about 1 minute more. Stir in the dill and parsley and season to taste with salt and pepper.
  • As soon as the pasta is done, drain it and toss with the sauce and the pine nuts. Serve immediately.
