Ingredients
- 1 ½ cup oat bran flake oat flakes
- 1 cup rice flour sweet rice flour or brown rice flour
- ½ cup whole-wheat pastry flour
- ½ cup corn oil unrefined corn germ oil
- 1 tsp sea salt
- 4 tbsp pure maple syrup
- 1/2 to 3/4 cup raisins
- 1 cup chopped nuts
Instructions
- Mix the flours and oat flakes.
- Rub the oil into the combined flours.
- Add the salt, maple syrup, and enough water to make a wet but not runny batter. Stir in the raisins and nuts, if desired.
- Drop by the teaspoonful onto an oiled cookie sheet. Press with the back of a spoon. Bake 20 minutes at 350°.
- These cookies are more moist and chewy if the dough is refrigerated overnight. The next day, add more water, to make a wet but not runny dough. Bake.
