Ingredients
  

  • 1 ½ cup oat bran flake oat flakes
  • 1 cup rice flour sweet rice flour or brown rice flour
  • ½ cup whole-wheat pastry flour
  • ½ cup corn oil unrefined corn germ oil
  • 1 tsp sea salt
  • 4 tbsp pure maple syrup
  • 1/2 to 3/4 cup raisins
  • 1 cup chopped nuts

Instructions 

  • Mix the flours and oat flakes.
  • Rub the oil into the combined flours.
  • Add the salt, maple syrup, and enough water to make a wet but not runny batter. Stir in the raisins and nuts, if desired.
  • Drop by the teaspoonful onto an oiled cookie sheet. Press with the back of a spoon. Bake 20 minutes at 350°.
  • These cookies are more moist and chewy if the dough is refrigerated overnight. The next day, add more water, to make a wet but not runny dough. Bake.
