Oriental Chicken Salad

Ingredients
- 3 cups packed torn spinach leaves
- 3 cups packed torn salad greens
- 1-1/2 cups shredded cooked chicken or diced deli turkey breast
- 1 cup fresh bean sprouts
- 1/2 cup canned drained, sliced water chestnuts or bamboo shoots
- 1/2 cup coarsely shredded carrots
- 3 tbsp seasoned rice vinegar or white wine vinegar
- 2 tbsp soy sauce
- 1 tbsp oriental sesame oil
- 1 tsp honey
- 1/2 tsp bottled minced fresh gingerroot or ground gingerroot
- 1/4 to 1/2 tsp hot chili oil optional
- Chopped roasted peanuts or cashews
Instructions
- Combine spinach, lettuce, chicken, bean sprouts, water chestnuts, and carrots in a large bowl.
- Combine vinegar, soy sauce, sesame oil, honey, gingerroot, and, if desired, hot chili oil, mixing well in a small bowl.
- Drizzle over lettuce mixture and toss well.
- Transfer to four serving plates and sprinkle with peanuts.
