NY Sirloin with Italian Salsa

Ingredients
- 2 pkg Backyard Beauties Cocktail tomatoes
- 1 jar Artichoke hearts drained and chopped
- ½ cup onion finely chopped
- ½ cup Roasted red peppers drained and coarsely chopped
- 2 each Fresh garlic cloves minced
- ¼ cup Fresh basil chopped
- 1 sprig Fresh rosemary chopped
- ¼ cup olive oil
- 1/3 cup Balsamic Vinegar
- 2 pinches salt divided
- 2 dashes ground black pepper divided
- 1 tablespoon canola oil
- 1 ½ lb New York sirloin steak
Instructions
- For Salsa: In a large bowl, mix together: tomatoes, artichoke hearts, onion, roasted red peppers, garlic, basil, rosemary, olive oil, balsamic vinegar, 1 pinch of salt and one dash of pepper. Refrigerate for a minimum of 2 hours.
- 15 minutes before cooking steak, preheat broiler.
- Brush both sides of steak with canola oil and 1 pinch of salt and 1 dash of pepper.
- Cook steak on broiler pan for 5 minutes. Turn steak over and cook the other side for 5-10 minutes until desired doneness.
- Serve with salsa.
