Ingredients
  

  • 2 pkg Backyard Beauties Cocktail tomatoes
  • 1 jar Artichoke hearts drained and chopped
  • ½ cup onion finely chopped
  • ½ cup Roasted red peppers drained and coarsely chopped
  • 2 each Fresh garlic cloves minced
  • ¼ cup Fresh basil chopped
  • 1 sprig Fresh rosemary chopped
  • ¼ cup olive oil
  • 1/3 cup Balsamic Vinegar
  • 2 pinches salt divided
  • 2 dashes ground black pepper divided
  • 1 tablespoon canola oil
  • 1 ½ lb New York sirloin steak

Instructions 

  • For Salsa: In a large bowl, mix together: tomatoes, artichoke hearts, onion, roasted red peppers, garlic, basil, rosemary, olive oil, balsamic vinegar, 1 pinch of salt and one dash of pepper. Refrigerate for a minimum of 2 hours.
  • 15 minutes before cooking steak, preheat broiler.
  • Brush both sides of steak with canola oil and 1 pinch of salt and 1 dash of pepper.
  • Cook steak on broiler pan for 5 minutes. Turn steak over and cook the other side for 5-10 minutes until desired doneness.
  • Serve with salsa.
