Mushroom, Bacon, and Goat Cheese Crostini

Ingredients
- 6 slices bacon finely chopped
- 12 oz. finely chopped mushrooms
- 1/4 cup dry white wine
- Salt and pepper
- 3/4 cup goat cheese
- 18 thin slices baguette toasted
- Minced chives for garnish
Instructions
- 1. Cook bacon in a skillet over medium heat until crispy; remove with a slotted spoon and reserve for garnish. Reduce heat to low, add mushrooms, and cook until caramelized, 10 to 12 minutes. Add wine and cook until absorbed; season with salt and pepper to taste.
- 2. Spread goat cheese evenly over toasted bread slices. Top evenly with mushrooms, bacon, and a sprinkle of minced chives.
