Ingredients
- 2 cups chopped fresh quahogs sea clams or other chopped clams
- 4 cups defatted fish broth Preferably homemade
- 1 small onion finely chopped (to yield 1/2 cup)
- 1 medium-size clove garlic
- 1 bay leaf
- 1/4 tsp dried thyme leaves
- 3 ribs celery trimmed and finely diced
- 1 large carrot finely diced
- 1 medium-size yellow boiling potato such as Yukon Gold or Yellow Finn, peeled and finely diced
- Salt
- 1 tsp freshly ground black pepper
- 1 tbsp chopped fresh parsley leaves
Instructions
- Combine the quahogs, fish broth, onion, garlic, bay leaf, and thyme in a heavy 4-quart saucepan over high heat.
- When the liquid boils, reduce the heat to medium-low, cover, and simmer for 10 minutes.
- Add the celery, carrot, and potato and cook about 30 minutes longer.
- Season with salt and pepper; stir in the parsley just before serving.
