Ingredients
  

  • 1 cup all-purpose flour
  • 1 tsp coarse kosher salt
  • 1/4 tsp white pepper
  • 1-1/2 lbs fillet of sole
  • 3 whole egg white lightly beaten
  • 1 cup Japanese bread crumbs or any bread crumbs made from good quality white bread
  • ½ cup vegetable oil or needed amount for frying

Instructions 

  • Sift the flour with the salt and pepper. Set aside.
  • Cut the sole into diagonal crosswise strips 1/2 inch wide. Roll them in the flour, then dip them in the frothy egg whites, and finally coat them with the bread crumbs.
  • Heat 3 inches of oil in a deep, heavy wok or skillet to 360°F. Quickly fry the strips of sole, a few at a time, until they are lightly golden, about 3 minutes. Drain on paper towels.
  • Serve goujonettes hot or warm, with tartar sauce.
