Ingredients
- 1 lb boneless skinless chicken breast
- 3 whole Garlic cloves minced
- 3/4 tsp salt
- 2 tbsp olive oil
- ½ cup roasted red pepper
- 1/2 cup packed fresh basil leaves stems removed
- 2 tbsp chopped fresh mint leaves
- 1 tablespoon lemon juice
- 1 pinch black pepper
Instructions
- Cut chicken into 1-inch pieces; toss with garlic and salt. Heat oil in a large skillet over high heat. Add chicken mixture; stir-fry until chicken is cooked through, about 4 minutes. Add red peppers, basil, mint, and lemon juice; cook and stir 1 minute or until peppers are heated through and basil is wilted. Sprinkle generously with pepper.
