Ingredients
- 1-1/2 lb Pork
- 1-1/2 lb pork fat
- 1/2 lb Pork rind
- 1 tbsp Salt
- 3/4 tsp Black pepper
- 1 tsp Garlic crushed
- 1/4 tsp Sage ground
- 1/4 tsp Marjoram
- 1/4 tsp Thyme
- 2 oz Dry white wine
Instructions
- Procedure:
- Cut the meat into cubes small enough to fit into the grinder. Chill the meat thoroughly.
- Simmer the pork rind at least 2 hours in salted water, until very tender. Drain and chill.
- Grind the meat once with the 1/4-inch or 3/8-inch plate and then once with the 1/8-inch plate.
- Repeat this grinding procedure with the pork rind. Mix the ground pork rind with the ground meat.
- Mix the salt and spices with the wine. Add to the ground meat and mix thoroughly by hand.
- Stuff into hog casings.
