Easy Clam Chowder

Ingredients
- 2 cups 8 ounces frozen hash brown potatoes with peppers and onions (O'Brien style)
- 3 slices bacon
- 2 tbsp all-purpose flour
- 2 cups milk
- 1/4 tsp salt or to taste
- 1/4 tsp freshly ground black pepper
- 13 oz minced clams undrained
Instructions
- Thaw potatoes in microwave oven on HIGH for about 2 minutes.
- Cut bacon into 1/4-inch pieces and cook in a large saucepan over medium-high heat for 2 minutes. Add the flour and cook for 1 minute, stirring frequently. Stir in milk, salt, and pepper; cook for 1 minute, stirring constantly. Stir in potatoes and simmer, uncovered, over medium-low heat for 5 minutes, stirring occasionally. (Mixture will be very thick.) Stir in clams and their liquid; heat through, 3 to 4 minutes, stirring occasionally.
- Serve with oyster crackers and additional freshly ground black pepper.
