Delilah's Utah Clam Casserole

Ingredients
- Grease for baking dish
- 2 cups uncooked potatoes cut in strips (about 2 1/2" x 1/2")
- 1 cup carrots cut in strips
- 1 6-1/2- ounce can chopped clams undrained
- 1 medium onion peeled and sliced
- 1 stick butter
- Salt to taste
- Pepper to taste
- 1/2 tsp dill seed or weed
Instructions
- Lightly grease a 2-quart baking casserole dish.
- Place the potato strips in the bottom.
- Next layer the carrots, followed by clams with juice, and finally the onion.
- Melt the butter with seasonings and pour over casserole.
- Bake at 350° covered, for 45 minutes.
- After baking, you can sprinkle this dish with paprika and fresh parsley, if desired.
