Curried Pork with Peaches

Ingredients
- 1 tablespoon cooking oil
- 1 lb boneless pork cutlets 1/4 inch thick
- 1/2 whole onion chopped
- 1/2 tsp ground ginger
- 2 tsp curry powder
- 1 cup chicken stock
- 4 tsp cornstarch
- 1/4 tsp salt
- 1/2 cup coarsely chopped fresh peaches
- 2 tsp peach preserves
Instructions
- In a large skillet, heat the oil over medium heat. Add the cutlets and onion to the skillet and sauté the pork quickly about 2 minutes per side, until golden brown.
- In a medium bowl, stir together the remaining ingredients. Pour the mixture over the cutlets. Cook, stirring gently from time to time, over low heat until the sauce thickens, about 8 to 10 minutes.
- Place the meat on a plate and spoon the peaches and sauce over them. Can be served with cooked rice or noodles.
