Crumb or Gravel Pie

Ingredients
- 1/2 cup hot water
- 1 cup brown sugar
- 1/2 tsp baking soda
- 2 whole eggs beaten
- 1-1/4 cups all-purpose or cake flour
- 1/3 cup butter
- 1/4 tsp salt
- 1/2 to 1 tsp cinnamon
- 1/4 tsp nutmeg
- ¼ teaspoon ground ginger
- 1 pkg pastry dough for two-crust pie (9-inch)
Instructions
- In a mixing bowl combine the hot water and sugar or sweetening of your choice. Stir well and add the soda and beaten eggs.
- In another bowl mix the flour, butter, salt, and spices. Work until fine crumbs are formed.
- For crumb pie, turn the egg and sugar mixture into the pastry-lined pie pan; the edges should be well crimped. Spread the flour mixture over the top.
- For gravel pie, alternate the egg and sugar mixture with the crumbs, ending with a good thick layer of crumbs.
- Either way, bake at 450°F 10 minutes, reduce heat to 350°F, and bake about 20 to 25 minutes longer, or until the top feels fairly firm.
