Coleslaw with Sweet and Sour Vinaigrette

Ingredients
- 1 tbsp honey
- 3 tbsp rice vinegar
- 3 tbsp vegetable oil
- 1 tbsp minced fresh dill
- 1/4 cup sweet pickle relish
- ½ whole red cabbage cored and shredded
- ½ whole green cabbage or savoy cored and shredded
- 2 whole carrots shredded
- 1 whole yellow bell pepper or red bell pepper seeded, deribbed and cut into thin strips
- 1 dash salt
- 1 dash Freshly ground pepper
Instructions
- IN A MEDIUM BOWL, whisk honey, vinegar, and oil together. Stir in dill and relish.
- In a large bowl, combine cabbages, carrots, and bell peppers. Toss with vinaigrette. Add salt and pepper.
