Ingredients
  

  • 2 whole chicken breasts split, boned, and skinned
  • 1 tbsp olive oil
  • 1 ½ teaspoon ground cumin
  • 1/2 tsp salt
  • 1/4 - 1/2 tsp cayenne pepper as desired
  • 2 whole Garlic cloves minced
  • 8 oz stewed tomatoes
  • 1/3 cup sour cream
  • 1 each avocado ripe, peeled, seeded, and diced
  • ¼ cup cilantro coarsely chopped

Instructions 

  • Pound chicken to 1/2-inch thickness. Heat oil in a large skillet. Sprinkle chicken with cumin, salt, and cayenne pepper. Place chicken and garlic in skillet and cook over medium-high heat, 2 minutes per side. Cook
  • Add tomatoes; cover and simmer until chicken is cooked through, 5 to 6 minutes. Transfer chicken to a serving platter; keep warm.
