Ingredients
  

  • 3 lbs peeled and grated raw carrots
  • 6 cups sugar
  • 1 ¼ cup Fresh lemon juice
  • 6 tablespoons lemon zest
  • ¼ lb almond grated

Instructions 

  • In a large saucepan, cover grated carrots with water and cook until tender. Press through a strainer.
  • In a large preserving kettle, combine carrots with sugar, lemon rind, and juice and cook gently about 1/2 hour, or until thick and clear. When nearly done, add almonds. Put into sterilized glasses and seal.
