Ingredients

  • 3/4 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 cups semisweet chocolate chips
  • 1 tsp vanilla extract
  • 1/4 cup canola oil
  • 2/3 cup sugar
  • 1 egg
  • 1 egg white

Instructions

  • Preheat the oven to 325°.
  • Lightly spray or wipe a 9-inch square pan with vegetable oil.
  • In a small bowl, combine the flour, baking soda, and salt. Set aside.
  • In a large bowl, combine the chocolate chips and vanilla.
  • In a saucepan, combine the oil, sugar, and 2 tablespoons of water. Bring the mixture just to a boil. Pour the hot mixture over the chips and stir. Add the egg and the egg white, and stir. Stir in the flour mixture. Pour the batter into the pan and spread evenly. Bake for 20 to 25 minutes-don't overcook. These should be slightly underdone for chewy brownies. Cut while still warm into 1-inch squares, and cool before removing them from the pan.
