Ingredients
- 16 oz frozen broccoli
- 9 oz frozen corn
- 24 oz cottage cheese
- 3 wholes egg
- 1/3 cup butter or margarine
- 1/3 cup all-purpose flour
- 2 cups shredded Swiss cheese
- 1/2 cup finely chopped onion
- 1 dash salt to taste
- 1 dash pepper to taste
- 8 slices bacon cooked crisp and crumbled
- 10 each whole wheat crackers crushed
Instructions
- Preheat oven to 350 degrees F. Cook broccoli and corn, separately, according to package directions; drain. Combine cottage cheese, eggs, butter, and flour in a blender container; blend until smooth and set aside. Combine broccoli, corn, cheese, onion, and salt and pepper in a large mixing bowl; blend in cottage cheese mixture. Gently spoon into a greased 8 x 12 x 2-inch baking dish; sprinkle bacon and crushed crackers on top. Bake in preheated oven for 45 minutes.
