Baked Haddock Vera Cruz

Ingredients
- 1 14-1/2- or 16-ounce can stewed tomatoes undrained
- 8 stuffed green or pitted Spanish olives halved crosswise
- 3 tbsp hot or medium prepared salsa
- Dash of salt optional
- Dash of white pepper optional
- 4 4- ounce haddock fish fillets
- 1 tsp ground coriander
- 2 tbsp drained capers for garnish optional
- Chopped cilantro for garnish optional
Instructions
- Heat oven to 450°F. Combine tomatoes, olives, salsa, and, if desired, salt and pepper.
- Spread half of tomato mixture in a shallow baking dish that is large enough to hold fish in one layer. Put fish in dish and sprinkle with coriander. Spoon remaining tomato mixture over fish.
- Bake for 12 to 15 minutes or until fish is opaque.
- Transfer fish and sauce to a serving platter and, if desired, sprinkle with capers and cilantro.
