Ingredients
  

  • 1 14-1/2- or 16-ounce can stewed tomatoes undrained
  • 8 stuffed green or pitted Spanish olives halved crosswise
  • 3 tbsp hot or medium prepared salsa
  • Dash of salt optional
  • Dash of white pepper optional
  • 4 4- ounce haddock fish fillets
  • 1 tsp ground coriander
  • 2 tbsp drained capers for garnish optional
  • Chopped cilantro for garnish optional

Instructions 

  • Heat oven to 450°F. Combine tomatoes, olives, salsa, and, if desired, salt and pepper.
  • Spread half of tomato mixture in a shallow baking dish that is large enough to hold fish in one layer. Put fish in dish and sprinkle with coriander. Spoon remaining tomato mixture over fish.
  • Bake for 12 to 15 minutes or until fish is opaque.
  • Transfer fish and sauce to a serving platter and, if desired, sprinkle with capers and cilantro.
