Ingredients
  

  • 12 cups fresh bread crumbs
  • 1 cup chopped parsley
  • 1-1/2 cups finely sliced scallions or shallots
  • 1 tbsp salt
  • 1-1/2 tsp freshly ground black pepper
  • 1/2 to 3/4 lb unsalted butter
  • 1/2 cup pine nuts
  • 2 tbsp fresh or 1 tbsp dried tarragon

Instructions 

  • Use French or Italian bread, crusts trimmed, for the bread crumbs.
  • Melt the butter in a skillet, add the scallions or shallots, and toss to coat well. Mix with the rest of the ingredients. Taste for salt.
  • Use to stuff the breast cavity. This amount should be more than ample for a 20-pound bird.
