Ingredients
  

  • 2 cups shelled cooked shrimp
  • 1/4 cup chopped chives
  • 5 tablespoon dijon mustard
  • 2 tbsp chopped capers
  • 3 tbsp mayonnaise
  • 10 oz water chestnuts drained and chopped
  • 1 dash salt to taste
  • 1 dash Black pepper freshly ground, to taste
  • 1 teaspoon lemon juice
  • 1 dash Tabasco pepper sauce to taste
  • 4 each pita bread white or whole wheat
  • 1 whole hardcooked egg sliced, watercress and olives for garnish

Instructions 

  • Chop the shrimp coarsely and combine with the chives, mustard, capers, mayonnaise, water chestnuts, salt, pepper and lemon juice. Add more mayonnaise if necessary to make a spreadable mixture. Add Tabasco and blend well.
  • Spread the filling over the insides of the pitas. Garnish the sandwiches with egg slices, watercress sprigs and olives.
