Ingredients
- 6 small artichokes cleaned and with the outer leaves removed
- 2 tbsp extra-virgin olive oil
- 3 small onions sliced thinly
- 4 oz lean beef diced
- 4- ounce slab of pancetta cured bacon, cut into small cubes
- 3 tbsp fresh peas or frozen
- 12 asparagus tips
- 3 oz fresh shell beans
- 1 quart beef broth
- 4 slices thick crusty bread
Instructions
- Slice the artichokes into sixths; remove and discard the core.
- Heat the oil in a skillet over medium heat; sauté the onions until lightly browned.
- Add the beef and the pancetta and cook for 10 minutes longer.
- Add the remaining ingredients and cook for 45 minutes.
- Toast the bread on both sides and place one slice in each of four soup plates.
- Pour the soup over the bread, let sit for a few minutes, and serve.
