Ingredients
  

  • 6 small artichokes cleaned and with the outer leaves removed
  • 2 tbsp extra-virgin olive oil
  • 3 small onions sliced thinly
  • 4 oz lean beef diced
  • 4- ounce slab of pancetta cured bacon, cut into small cubes
  • 3 tbsp fresh peas or frozen
  • 12 asparagus tips
  • 3 oz fresh shell beans
  • 1 quart beef broth
  • 4 slices thick crusty bread

Instructions 

  • Slice the artichokes into sixths; remove and discard the core.
  • Heat the oil in a skillet over medium heat; sauté the onions until lightly browned.
  • Add the beef and the pancetta and cook for 10 minutes longer.
  • Add the remaining ingredients and cook for 45 minutes.
  • Toast the bread on both sides and place one slice in each of four soup plates.
  • Pour the soup over the bread, let sit for a few minutes, and serve.
