Coulis De Tomates (Fresh Tomato Sauce)

Ingredients
- 2 cups tomatoes cored and cut into 1-inch cubes
- 2 tbsp butter
- 1/4 cup finely chopped onion
- 1/2 tsp finely minced garlic
- 1/3 cup dry white wine
- 3 fresh basil leaves or 1 tsp dried basil
- Salt and freshly ground pepper to taste.
Instructions
- Prepare the tomatoes and set aside.
- If you are to serve this dish with Scaloppine Of Veal With Herbs (see recipe), you will not have to use additional butter. Use the same skillet with drippings. Otherwise, add the butter to a skillet.
- Add the onion and garlic and cook briefly. Add the wine and cook to reduce about half. Add the tomatoes, basil, salt and pepper to taste. Cook about 5 minutes.
- Pour the mixture into the container of a food processor and blend to a purée. Reheat and serve.
