Baked Rice Provencal

Ingredients
- 1 ½ cup short-grain brown rice
- 1-1/4 cups chopped onions 1-1/2 medium onions
- 1 tsp basil
- 1 tsp oregano
- 1/2 tsp sea salt
- 1 tbsp vegetable broth powder
- 3 cups water
- 2 to matoes sliced
- 3 garlic clove pressed
- 1 tbsp olive oil
Instructions
- Preheat oven to 350°F.
- Place the rice and the onions in a lightly oiled baking dish. In a medium bowl, combine the basil, oregano, salt, vegetable broth powder, and water. Mix well and pour over the rice. Stir and cover.
- Bake the rice at 350°F for 1 hour.
- Uncover the rice and top it with the tomatoes. In a small bowl, combine the olive oil and the garlic. Brush this mixture over the tomatoes. Cover. Return the mixture to the oven and bake for 15 minutes more.
- Serve with bean and vegetable dishes.
