Ingredients
  

  • 48 oz catfish fillet about 8 ounces each
  • 12 oz evaporated milk
  • 1-1/4 cups all-purpose flour
  • 2/3 cup grated Parmesan cheese
  • 1/2 tsp baking powder
  • 1 tsp onion powder
  • 1/4 tsp garlic powder
  • 1 tbsp ground paprika
  • 1/2 teaspoon italian seasoning
  • 1/2 tsp salt
  • 1 tsp pepper
  • 1/2 cup butter
  • 1/2 cup margarine
  • 1 cup Almonds sliced, toasted

Instructions 

  • Place the fillets in a shallow glass baking pan large enough to lay the fillets flat. Pour the milk over the fillets and marinate overnight in the refrigerator.
  • Preheat oven to 400° F. In a medium-sized bowl, mix together the next nine ingredients and dredge the fillets in this mixture.
  • In a small saucepan, melt together the butter and margarine. Place the marinated fillets on a greased, rimmed baking sheet and drizzle the butter mixture over the fillets. Bake for 20 minutes. Do not turn.
  • Place the fillets on warmed serving plates and top with the almonds. Serve immediately.
