Ingredients
- 5-1/2 cups 1/2 pound medium egg noodles
- 1/4 lb unsalted butter
- 1-1/2 tsp hot paprika or 1-1/2 tbsp sweet paprika and 1/4 tsp cayenne pepper
- 1 tsp caraway seeds
- 1 cup drained sauerkraut
- Kosher salt to taste
- Freshly ground black pepper to taste
- Sauerkraut juice if necessary
Instructions
- Boil egg noodles in salted water until cooked but firm. Drain and reserve.
- Meanwhile, over low heat, melt 2 tablespoons of butter in a 12-inch skillet. Add paprika or paprika and cayenne and cook, stirring, for 1-1/2 minutes.
- Add remaining ingredients and cook until heated through and slightly swimmy. Add noodles. Add extra sauerkraut juice, if necessary.
