Ingredients
  

  • 2 cups chopped fresh quahogs sea clams or other chopped clams
  • 4 cups defatted fish broth Preferably homemade
  • 1 small onion finely chopped (to yield 1/2 cup)
  • 1 medium-size clove garlic
  • 1 bay leaf
  • 1/4 tsp dried thyme leaves
  • 3 ribs celery trimmed and finely diced
  • 1 large carrot finely diced
  • 1 medium-size yellow boiling potato such as Yukon Gold or Yellow Finn, peeled and finely diced
  • Salt
  • 1 tsp freshly ground black pepper
  • 1 tbsp chopped fresh parsley leaves

Instructions 

  • Combine the quahogs, fish broth, onion, garlic, bay leaf, and thyme in a heavy 4-quart saucepan over high heat.
  • When the liquid boils, reduce the heat to medium-low, cover, and simmer for 10 minutes.
  • Add the celery, carrot, and potato and cook about 30 minutes longer.
  • Season with salt and pepper; stir in the parsley just before serving.
